This easy Spiced Pear Bellini recipe is perfect for any time of year. If you're looking for a tasty pear cocktail recipe, this one uses pear juice infused with cinnamon and cardamom to create a flavorful base that pairs perfectly with champagne. This is a great drink to make for a crowd.
1bottle of Prosecco or other sparkling winechilled
Instructions
Place the cinnamon on a cutting board.
With the flat side of a Chef's knife laying flat on the cinnamon sticks, give it a whack with the heel of your hand to crack them open. (It will break into pieces)
To a saucepan, add the broken cinnamon, cardamom, sugar (if using) and pear juice.
Cook on high heat until boiling.
Turn off heat and cover.
Let sit for at least an hour.
Strain out the large pieces of cinnamon as you pour into a pitcher or other large container to cool.
Cool completely then refrigerate for at least 3 hours.
To serve, pour about an ounce of spiced pear juice into a glass and top with sparkling wine.
Serve immediately once champagne is added.
Notes
If you can't find pear juice, you can use pear nectar or blend up pears and a little water in a blender (must strain!). You can use less or more sugar based on how sweet you like your drinks. It's best to taste whatever pear drink you are using to see if you even need to add any more sugar or if it is already sweetened.This recipe will make about 30 ounces of spiced juice. You will use about 1 ounce of juice for each bellini. You can estimate that you can make 30 bellinis if 1 ounce of juice is used. Some people like more juice and some like less.You can usually get 5 servings out of a bottle of sparkling wine, probably more like 6 if making bellinis. Buy as many bottles of wine as you need based on the quantity you need.You can use any type of sparkling wine like Champagne, Cava, prosecco or any California sparkling wine.Leftover spiced juice can be stored in an air-tight container in the fridge for at least a week.
