Studded with festive sprinkles and topped with a rich vanilla buttercream, these easy Birthday Sprinkle Cupcakes are perfect for kids AND adults and best of all, they start from a boxed cake mix.
Line a cupcake pan with cupcake liners and set aside.
In a medium to large bowl beat the butter until light and fluffy.
Add half the yellow cake mix and beat until airy.
Incorporate the eggs, one at a time beating well after each addition.
Mix in the sour cream.
Slowly add the remaining cake mix and beat until incorporated.
Add the sprinkles and fold into the batter.
Divide the batter between the cupcake liners and put in the oven.
Bake for 5 minutes at 400 degrees and then turn the oven down to 350 degrees. Bake for 12 more minutes or until done.
Remove from the oven and cool completely before frosting with the vanilla frosting.
Add extra sprinkles on top before serving.

Just choose something that isn't too dark so that the sprinkles can stand out.Instead of mixing the sprinkles into the batter you could make them like pinata cupcakes instead and hide the sprinkles inside the cupcake. Make sure you use good-quality sprinkles. Good quality sprinkles hold their color and don’t bleed through the batter which is important if you don’t want to end up with a weird gray-colored cupcake. Mix in the sprinkles at the very last minute to prevent them from bleeding. Add them to the batter just before scooping into the cupcake liners.
