This Malibu Daiquiri recipe tastes like a vacation in a glass. Seriously, one sip, close your eyes and you’ll think you are on a beach somewhere.

All you really need to make this recipe is a good blender, a few simple ingredients and a bottle of coconut rum.

Why I love this frozen cocktail recipe

This Coconut Rum Daiquiri is creamy, sweet, slightly tangy, and has a lovely kick from the rum. And because you’re using frozen limeade and ice to make this frozen cocktail recipe, you can add as little or as much coconut rum as you like!!

A traditional daiquiri is made with lime juice, rum, and simple syrup, but I think the coconut twist is just perfect for summer, and I love how the limeade cuts down on the number of ingredients you need for less time in the kitchen and more time spent in the sun!

It is a delicious rum cocktail I crave more and more as the weather gets warmer and I can’t wait for you to try it!!

Keep all of these ingredients on hand this summer so you can blitz up a batch of frozen coconut daiquiris in just moments!

Here’s what you need to make a delicious coconut daiquiri:

I like to use store-bought frozen limeade for these frozen coconut drinks. I like to keep a stash in the freezer all summer so I can make them any time I want.

I’ve used Malibu coconut rum here because who doesn’t have a bottle on their bar?? But if you have another brand, use that instead!

Also, if you have regular white rum but no coconut rum you don’t have to go to the store *just* to make this recipe. There is plenty of coconut flavor in the coconut cream so these frozen daiquiris will still be delicious made with that instead.

You’ll notice Cream of Coconut in the picture, which is a sweetened coconut cream usually used in drinks and desserts. It’s usually found in the cocktail section of the store.

If you can’t find the cream of coconut, you can use coconut cream (scraping the thick cream off the top of a can of coconut milk).

If after you make this coconut rum daiquiri you taste it and still want a sweetener drink, go ahead and add a splash of simple syrup.

Step 1

To your blender, add the ice, water and coconut rum.

Then add the frozen limeade, followed by the cream of coconut.

Blend until smooth.

Pour into your favorite cocktail glasses and garnish with fresh lime slices or wedges.

Variations

  • Make it fruity – swirl a spoonful of blended fresh or frozen strawberries through the frozen daiquiri before pouring it into glasses. Or, just add a handful of fresh fruit (pineapple would also work really well) to the blender to mix it all together!
  • Make it a Caipirinha – to make a frozen coconut caipirinha instead of a daiquiri, switch the coconut rum for cachaça.

Tools

The key to getting the perfect frozen cocktail that is nice and smooth without any icy chunks that get stuck in your straw is to use a good, high-powered blender. This is the one I have and recommend.

Frequently Asked Questions

Can I make this frozen coconut daiquiri ahead?

Frozen drinks are best consumed as soon as they are made, but you have to remember to freeze the limeade ahead for these anyway. You can always speed things up by keeping everything else except for the ice in the blender jug in the fridge up to a couple of hours in advance.

If you just want to make 1 or 2 drinks, quarter or half the recipe.

Can I substitute anything for the coconut cream?

You really need the thickness and the coconut flavor of coconut cream here, but if you can’t find it at the store open a can of organic coconut milk (the type without any preservatives to stop it from separating in the can) and scrape the coconut cream off the top and use that.

Can I use fresh lime juice instead of the limeade?

Sure, but you’ll want to add a bit more ice, and the amount you’ll need will depend on the size of your limes. Start with the juice of two and add more if you think the drink needs it. Add a dash of simple syrup to add back in the sweetness you’ll be losing subbing out the limeade.
