Easy Herb Baked Eggs Recipe + Coffee Time
No matter what’s going on in life, my morning coffee is always there. I make sure to build in time to sit down and enjoy my cup before the rest of the day gets crazy. If at all possible, I make sure that I don’t have to take my coffee to go.
And while I sip my coffee, I often make these easy herb Baked Eggs to enjoy along with it. It’s a purposely slow, but meaningful way to start my day.
You don’t need measuring tools for this recipe, and it doesn’t require you to stand at the stove which I love!
This oven safe mug is my favorite thing to use to make these baked eggs. It’s such an easy breakfast to make (hardly any extra dishes to wash!) plus it’s pretty dang healthy. It fills me up without making me feel stuffed and it’s a great compliment to my coffee. I picked up both of these cute mugs and my Horizon Organic Half and Half at Target!

I love making eggs in the oven!
Just a few simple ingredients make these baked eggs a delicious addition to my morning. I love that it is not only full of flavor, but protein, to keep me feeling full and give me energy to start my day.
To make these eggs, you need an oven proof ramekin or mug. A quick spray with oil will keep the eggs from sticking to the inside and makes clean up a breeze. A splash of Half and Half, no need to measure, makes the eggs super creamy and yummy.
Chopped herbs add a lot of flavor without a lot of calories. I try to incorporate fresh herbs wherever I can in my recipes! I use my kitchen shears to cut them up, but you can easily just tear them, or get all fancy and use a knife to chop them.
I add the eggs and give them a quick whip with a fork to add some air and make them fluffy. This recipe is SO simple! I add a little bit of season salt to give them a little flavor but that part is totally up to you! They are also tasty with celery salt and sometimes I like to add a little red pepper flake for an extra kick. This is the part of the recipe that you can totally make your own.
Of course you can scramble the eggs in a pan on the stove, but I love that I can pop it in the oven and get back to my cup of coffee. They bake for about 20 minutes, until just set.
Once they are done, I let them cool for a minute, then top them with arugula. The arugula adds a tasty peppery flavor, a nice crunchy texture and another layer of freshness.
My favorite place to start my day is in front of the computer. I can catch up on the news, start checking a few emails and just generally get prepared for the day ahead. These baked eggs are easy to enjoy, right from the same mug they cooked in (of course I’ve let them cool down a bit – do NOT grab this mug straight from the oven! Ouch!).

Instructions
- Preheat the oven to 350 degrees.
- Spray an oven-proof ramekin or mug with cooking oil.
- Add Horizon Organic Half and Half, chopped herbs, two eggs and seasoning to the mug.
- Use a fork and mix well.
- Bake in oven for approximately 20 minutes or until the eggs are just set.
- Let cool for a few minutes, then top with arugula.
