What you need to make a phyllo cup appetizer.

Phyllo shells are pre-made and easy to find in the freezer section of the grocery store. You can try your hand at making your own, but that will add a ton more time to the prep of this recipe. The flavor payoff won’t be worth it in my opinion.

Feta adds a salty and tangy quality to the tomato salad inside the cups. It should not be skipped! Although you could use parmesan in a pinch.

Tomatoes and cucumbers make up the majority of the filling and they are always amazing together.

Green onion gives a nice mild flavor and subtle sweetness to the filling.

A simple dressing of olive oil, lemon, basil and dill adds the perfect finishing touch to this simple bite-sized appetizer.

Directions

Follow the directions on the phyllo cup box. They mostly just take about 3-5 minutes in a 350-degree oven to crisp up. Then set aside.

A bowl with chopped cucumbers and tomatoes with feta and green onion.

Chop the tomato, cucumber, and green onion. Feel free to peel the cucumber before chopping if desired.

In a small bowl, combine the crumbled feta cheese, diced tomato, chopped cucumber, and diced green onion.

Seasoned olive oil to use as dressing for Mediterranean inspired appetizer.

In a separate pinch bowl, stir together the olive oil, lemon juice, dried basil, garlic powder, salt, black pepper, and dried dill to create a flavorful dressing.

Tips

Finely chop the vegetables: Take the time to finely dice the tomatoes, cucumbers, and green onions (as evenly sized as possible) to ensure that each bite is filled with all the flavors and textures.

Drain excess liquid: After chopping the tomatoes and cucumbers, pat them dry with a paper towel to remove any excess moisture. This helps prevent the filling from becoming watery and ensures a better overall texture.

Be gentle when mixing: When combining the feta cheese, vegetables, and liquid seasoning blend, gently toss the ingredients together to avoid the cheese breaking into tiny pieces.

Use a small spoon: To fill the phyllo cups neatly and efficiently, consider using a small spoon. This allows for precise portioning and helps create a beautiful presentation.

Make them ahead: Make the salad and prep the phyllo cups ahead of time but keep the filling and cups separate. But for the best flavor and texture, put the filling in the cups just before serving. Phyllo cups may lose their crispness over time, so it’s ideal to assemble them shortly before your guests arrive.

Serve immediately or chill: These appetizers are best enjoyed fresh, but if you need to prepare them ahead of time, refrigerate them until serving as long as it’s within 30 minutes.

Get creative with garnishes: Enhance the look (and flavor) of your Mediterranean Phyllo Cup appetizers by adding a sprinkle of fresh herbs, a drizzle of balsamic glaze, or a sprinkle of crushed red pepper flakes. Let your creativity shine!

Variations

Add some extra veggies to the Mediterranean phyllo cup filling, such as diced bell peppers, olives, or artichoke hearts. These vibrant additions will bring even more Mediterranean flair to your appetizers.

Infuse the filling with Greek flavors by incorporating crumbled Greek feta cheese, Kalamata olives, and a sprinkle of dried oregano.

If you prefer a bit of heat, kick up the spice level by adding finely diced jalapeños or a pinch of cayenne pepper to the filling. The combination of the creamy feta and the spicy kick will tantalize your taste buds.

Experiment with different fresh herbs like mint, parsley, or cilantro. These aromatic herbs will bring a burst of freshness and add a unique twist to the appetizers.

For those who enjoy meat in their appetizers, consider adding cooked and crumbled bacon or diced grilled chicken to the filling. The savory meaty addition will take these bites to a whole new level.

Frequently Asked Questions

How do you keep phyllo cups from getting soggy?

To keep phyllo cups crisp, it’s best to fill them just before serving. If you need to make them ahead of time, store the filled cups in an airtight container (once they’ve cooled) to maintain their crunchiness.

Do phyllo cups need to be thawed before baking?

Most phyllo cups come pre-baked and ready to use, so there’s no need to thaw them before filling. Simply take them out of the packaging and start adding your flavorful ingredients. As I mentioned above, I like to bake them for a few minutes to get them nice and crispy.

Are phyllo cups already baked?

No, phyllo dough and egg roll wrappers are different. Phyllo dough is paper-thin and made from flour, water, and a small amount of oil, resulting in delicate and flaky layers. On the other hand, egg roll wrappers are thicker and made from flour, water, and eggs, giving them a denser texture.

What’s the difference between phyllo and filo pastry?

Phyllo and filo pastry are the same things, just with different spellings. Phyllo is the Greek term, while filo is how other people name it.
