Peach Burrata Arugula Salad Recipe

You’ll LOVE these tasty flavors together! This Peach Burrata Arugula Salad is the perfect no-cook meal for summer. With delicious fresh produce and creamy cheese, this recipe is quick to make and one you’ll crave!

If loving arugula is wrong, I don’t want to be right. I love the peppery kick it has and think it’s the best option for most salads. But salads can get boring.

I like to make sure the salads I eat are unique and flavorful (this White Bean Salad is a favorite!) and this one does not disappoint!

Why This Recipe Works

Arugula has a ton of flavor, is low in calories, for a relatively large portion, and is high in Vitamin A and K and rich in folates (says Wikipedia – the most trusted source in online information). I kid, I kid.

Arugula is hearty so it stands up to dressing well, or in this case, holds its own against the bold balsamic drizzle.

It’s a great counterpoint to the sweet, juicy peaches. And burrata adds a creaminess that is unmatched. These flavors just go together.

You can jazz it up even more with a few other things to add another texture or layer of flavor.

Overall, this Peach Burrata Arugula Salad is fresh, sweet, creamy, salty, crunchy, tangy and all the other things.

You also won’t feel like a pig when you shovel a second huge helping into your mouth. It is a salad after all.

Ingredients

  • Arugula
  • Peaches
  • Burrata
  • Almonds
  • Red Onion, sliced
  • Pre-cooked, shredded chicken
  • Olive Oil
  • Balsamic Vinegar or glaze
  • Sea salt

This is one of those recipes that is more like a “recipe” since how much you use is totally up to you.

Start with a large plate or bowl and add your arugula.

I prefer to make my salads in a large bowl. They are easier to dress and eat from. For the purposes of not looking like a slob in this post, I daintily placed the greens on a plate like a lady.

Add as much or as little burrata as you like. Burrata is made from mozzarella and cream. The middle is runny which is odd and wonderful at the same time.

It goes great with roasted tomatoes in my Tomatoes and Burrata Appetizer.

How can you go wrong with fresh fruit??? Nature’s candy. (I know, technically, raisins have that designation but no one likes raisins). And I know some people don’t like their meals or desserts fruited so if they have to, the peaches are fine being viewed as a side dish.

But I like them perched right up on top of my arugula next to the burrata.

I always like to have protein on my salads so some pre-cooked shredded chicken makes this a little more hearty and filling.

This fresh dinner idea doesn’t even have a legit dressing. All you need is a drizzle of really great olive oil and a drizzle of a delicious balsamic.

Top with a hearty sprinkle of Maldon sea salt and you have the most delicious sweet and salty meal that hardly took you any time to make! Yum!

*Hot Tip: Set out the ingredients for the salad like a salad bar and let your kids (or weeknight dinner guests – this is a great dish to serve for mid-week entertaining) build their own meal.

They may put it together like a salad or they may not, either way, there is some great protein and fruits and veggies. Kids love to be in control of what they eat.

*Note: The amounts in the recipe card are for making 1 salad. But most of the items come in a larger package or size which means you can easily make more than 1 salad. If you want to make this for a lot of people, you’ll just use your best guess for how much arugula to buy, etc.

Variations

There are many more flavors to add that will kick this salad up even more!

  • Corn is sweet and pairs really well with the peaches.
  • While I’m not a fan, the saltiness of prosciutto is a great topping option. (I do like it crisped up on ravioli though…)
  • Fresh herbs, especially basil are a match made in heaven with the other flavors.
  • Grill the peaches for even more flavor. It will bring out the sweetness and add a slight caramelized flavor.
  • All of these flavors also go really well with fresh melon so consider adding that in too!
  • A touch of red pepper flakes will give it a spicy kick that you’ll love.
  • If you can’t find burrata cheese, you can substitute it with mozzarella or even goat cheese. Blue cheese and feta would also be delicious if you like the strong flavor.
