Easy Fish Stick Tacos Recipe
These Fish Stick Tacos are quick and easy to make and perfect for your kids who love fish sticks. Oven-baked fish sticks served in corn tortillas with all your favorite taco fixings are one of my favorite super quick and easy weeknight dinner ideas that your whole family will love!

The easiest fish tacos ever
This fish taco recipe with fish sticks took me hardly any time to make and tastes delicious. I call that a weeknight dinner win!
I ran into my girlfriend, Trudy, at the store a few weeks ago. We chatted about fast meal ideas, as you do. She mentioned making fish tacos with fish sticks and I slapped my forehead. Totally genius.
So I stole her idea (which she stole from a friend so it’s ok…)

These tacos are the epitome of semi-homemade.
Fish sticks bake up quickly in the oven and are crispy and a perfect protein to add to the tacos.
Bagged salad mix means you have less prep time plus get a variety of veggies that add the perfect crunch.
A few extra taco toppings and a kid-friendly dinner is served! It’s one of my go-tos for busy weeknights.

- Frozen fish sticks, cooked
- Eat Smart Southwest Salad Kit
- Fresh limes
- Corn
- Cheddar cheese
- Cotija cheese
- Cilantro
Grab your favorite brand of frozen fish sticks. I love that you can keep them in the freezer to make this meal fast when you need something tasty in a pinch.
I knew the Southwest Eat Smart Gourmet Vegetable Salad Kit was the way to go. The Southwest kit starts with five superfoods: savoy cabbage, red cabbage, red radishes, carrots and kale.
If you can’t find this particular salad mix, feel free to use cabbage, pre-bagged coleslaw or shredded lettuce instead.
The package also contains dried corn and tortilla strips (that provide the perfect crunch!), some cheddar cheese, and a chipotle dressing. All of those things make this perfect to fill a taco.
Feel free to use any of your favorite taco toppings and hot sauces that your family enjoys.
How to make Fish Stick Tacos
- Bake up your favorite brand of frozen fish sticks.
- Layout your corn tortillas.
- Add a handful of the Southwest salad mix.
- Top it with 2 fish sticks.
Add more toppings
To bring in more flavor I used a squeeze of fresh lime, some cilantro and cotija chese (it’s so good and salty!).
The crunch of the tortilla strips and corn from the salad mix is perfect in these fish stick tacos!
And I finished off my taco with a little bit of the chipotle dressing.
YOU GUYS! These are SO good!
If you’re not into the fish stick idea, that’s totally cool. Just use another kind of fish. Or even ground beef or chicken.
Using this salad kit brings tons of flavor and everything but the meat! You can also skip the taco altogether and make a fish stick salad or fish stick taco bowl!
These fish tacos with fish sticks make a great at-home lunch idea for moms or a great weeknight dinner for the whole family!
Just have each person make the taco according to their taste preferences and your work is done!

Easy Fish Stick Tacos
Ingredients
- 8 fish sticks
- 1 bag Eat Smart Gourmet Vegetable Salad Kit in Southwest
- 8 corn tortillas
- 2 whole limes, quartered
- cilantro optional
Instructions
- Bake the fish sticks according to package directions.
- For each taco, lay out a tortilla, then place a handful of the salad greens down.
- Top with 2 fish sticks.
- Add the other toppings according to taste!
- Be sure to drizzle a little of the chipotle dressing on top and squeeze a lime!
- Toppings can include, corn, cheddar cheese, cotija cheese, cilantro, taco sauce, jalapeno, red onion, sour cream, guacamole etc.
